Spiced Apple Carrot Muffins (Gluten, Dairy, Nut & Egg Free)

Excited to share these allergy-friendly, spiced apple carrot muffins (just in time for Rosh Hashana & the peak of apple season) — they were a big hit all around! The pumpkin pie spices and fresh ginger are a great complement to the apples and carrots, all coming together for a slightly sweet and delicious muffin (can be made into a bread as well). Incorporate into breakfast, snack or as a side dish.
It’s a fun recipe to make with kids — they especially love grating the apples and carrots (with supervision, of course!). There is a small amount of fresh ginger, which can have a very strong flavor and smell when it’s raw. However, once mixed into the recipe and baked, it’s flavor becomes much more subdued. This is a good conversation piece, as kids may not like ginger fresh or on it’s own, but may happily eat it when it’s incorporated into different flavors and/or cooked. It’s great to bring awareness to how we may like things one way and not another (raw vs cooked + plain vs mixed into other ingredients).
You can share with little ones that the flesh of the ginger rhizome can be yellow, white or red in color, depending upon the variety. In fact, there are over 1,000 species of ginger. They may be interested to know that ginger can help if they ever have a stomach ache/nausea or if they are fighting a cold. Ask if they want to try a ginger tea with honey to see what it tastes like. Getting them involved in the process and decision making (in a no-pressure environment) makes eating more fun and gives space for them to become more confident eaters.
